This was my wifes idea you know, in fact, this whole place was her brain child, i just follow orders. she said let there be an eggplant sandwich and at that moment, along with a few hundred thousand dollars that we kissed goodbye, the clouds parted and a ray of light cooked those eggplants into tender slices of fake meat marinated in a little of this and a little of that. i love that line it sums up everything when your trying to do a menu. enjoy!
